Pineapple-Cucumber Salad Recipe

This salad will knock your socks off!

So FRESH for summer!

These flavors are THE BOMB.

We ate it ALL for lunch today.
I will be making this again and again.

Pineapple-Cucumber Salad

1 fresh Pineapple, chopped into bite-size pieces
1 Cucumber, chopped
2 limes, zested and juiced
1/3 cup cilantro, roughly chopped (Use mint if you don't like cilantro)
Salt & Pepper to taste

Place pineapple and cucumber cubes into a large bowl. Zest two limes over the top, add cilantro and salt & pepper. (I used two pinches of kosher salt, and I think it's essential to get the best taste from your salad. I also think it's essential to use fresh pineapple, not canned.)

I didn't want to buy a whole pineapple, so I spent a little more and got a pre-chopped container at the grocery store, which was less pineapple than you'd get if you used a whole pineapple. I still used a whole large cucumber though, but only one lime since my salad was smaller. 

We ate it right out of the bowl for lunch, and we both thought it was to-die for. Try it!

No baking.
I'm feeling very lazy and sleeping a lot.
I can't seem to find my get-up-and-go.
It got up and went without me, I guess.

  2. My get up and go (I typed ho the first time, hee hee) must have gone where you did. I've been napping twenty minutes here and there all week. I need to get with it. At least now school is over, so I've got plenty of time to recharge. I love the look of your salad! Yum. Thanks for sharing. I love cucumbers in anything. I was just thinking I need to see if they have cucumber ranch dressing in the store. I feel like it comes out for the summer but maybe it's out all the time now and I'm just remembering from years ago. I hope you have a good weekend!

  4. I think it's a Flowering Hawthorne tree. My friend has one and it just started blooming this week. Your salad looks yummy! We've had the corn chowder twice already and love it. Thanks!

  5. Betsy is correct, it is a Flowering Hawthorn Tree, "Crataegus laevigata Rosea Flore Pleno" So pretty.
    Sometimes a person just needs to chill without having "TO DO" something.
    Sitting under a nice red umbrella having a cool salad with loved ones is all one really needs.

  6. The salad looks like something I need to try. Thanks for the recipe. Had to laugh about Fletch - our boy Quincy is a bit like that and has even eaten one of Oliver's dummies (I think you call them pacifiers). I know how you feel about just wanting to do nothing. I feel like that sometimes but it does pass eventually! At the moment I'm making fingerless gloves - the weather here is starting to get very chilly. Instead of crocheting the whole lot, I've decided I like a knitted 1x1 rib band and then the rest in crochet. Might have to start my blog up again so I can show them. Have a good weekend. xox

  9. Oh, Pammy! That salad is awesome! I literally just mixed it up and we couldn't stop sampling it ;p (it's safe in the fridge now, marinating for din-din). I may have stolen your mojo ;). I've been cooking again and crocheting after a long, dry spell. Even fixed us a quiche to go with the salad. Glad to learn that lovely tree is a Flowering Hawthorne.

  10. That salad looks delish but does it bother your tummy at all? If I eat cucumbers with ANYTHING, they come back and talk to be the rest of the day! I have to eat them totally alone....... but.... maybe the pineapple helps digest it! Could be. I do love fresh pineapple with about anything. My hubby the other day made a green salad (with lettuce) and added chopped up bananas (what?) and chunks of fresh pineapple. I was hesitant to eat it.. but did... and it was really good! Go figure. I thought that tree might be the flowering hawthorne.. it's about the only flowering tree that will grow around here and not get frozen to death in the early spring!     I'm going to try the cuke/pineapple salad tomorrow. It looks so refreshing.
    Not sure about the tree. Usually, apple flowers are flatter and one row of petals.
    I haven't had the gumption to crochet either for several days now. A lot of reading though- Must be Spring Fever-ya' think? Hang in there- it'll come back. Thank you for the recipe and have a great Memorial Day.

    Pammy Sue, Enjoy the beautiful sunshine and glorious mountain view that you have from your yard. We are heading into winter now. It was still negative 1C (30F) at 10am this morning. I am sure it dropped down further than that overnight. My bird baths were all frozen. Don’t worry, your 'get up n go' will come back!
